Chargrilled Food @ The Quarters

The Quarters, a humble yet modern Singapore local food cuisine that incorporates and evolves local Singapore food delights with a modern fusion twist. From their humble beginnings with their trademark Durian Crème Brulee to the launch of The Quarters at Icon Village, followed by Kush at Timbre+, I personally seen it grow from a food cart at a pop up event to their two ModSin food cuisines today.

Before the Chargrilled food event started, I went down earlier and had a chat with this ModSin food guru, Deming, the Founder of The Quarters, a person who is very passionate about his food, cooking and dining experiences. In my earlier articles that I wrote and shared about The Quarters, kicking it off with- Introducing The Quarters, The Real McCoy Salted Egg Burger and The Quarters Experience.

Using the common food lovers language lingo in Singapore, the Chargrilled Food @ The Quarters is like “zi char meets Izakaya (char-grilled)”, a fusion of local Singapore food meeting the Japanese charcoal grilled cooking. These new food menu options are now available in the dinner menu that diners visiting The Quarters are now able to have a more diversified menu than before, experiencing delicious food on a daily basis.

Today, I shall continue my journey and coverage of ModSin food cuisines at The Quarters. Ladies and Gentlemen, let me present to you, Chargrilled food at The Quarters, No Char, No Count (in no order of food preference)

Bibik’s Chicken – $12

Another perfectly charcoal grilled dish, the Bibik’s Chicken with a rich Buah Keluak Sauce. When I ate the Bibik’s Chicken, the chicken meat was tender and not overcooked, this demonstrated the skill and experience level of the chefs charcoal grill cooking. I love the Buah Keluak Sauce, I love the Bibik’s Chicken, so deliciously, skilfully and meticulously chargrilled to perfection by The Quarters.

Nai You Lobster – $68 (24hr advance order)

This lobster dish stood out, it was charcoal kissed and butter poached. The chefs of The Quarters were really skillful in their charocal cooking techniques, it was just nicely cooked, sweet and tender.

Grilled Steak – From $24

A selection of steaks to choose from, charcoal grilled to the highest standards by The Quarters, from the quality of the steaks to the final grilled steak, absolutely one of the best charcoal grilled dishes by The Quarters.

200g Grassfed Ribeye – $24

250g Angus Ribeye – $38

250g US Wagyu Striploin

400g 30 Day Dry Aged USDA Prime Ribeye – $140

Salted Egg Mid Wings – $12

Charcoal grilled to perfection, topped with The Quarters signature Salted Egg Aioli suace. Your fingers have to be fast and furious or else you might lose the mid wings to your fellow diners eating together.

Fwah! – $18

A most interesting and unique name to this dish, my maiden experience tasting Foie Gras. This had a local flavour to this dish, their house made kaya on toast, scrambled egg on toast. Fwah! is just soft, sweet and delicious, it just melts in your mouth. A ModSin fusion cuisine, our local favourite Singapore breakfast dish with Foie Gras. Just taste it!

Baby Back Ribs – $24

Marinated with their housemade BBQ sauce, this smoked dish will leave you lusting for more of the Baby Back Ribs.

Ooh La La! – $16

The Venus clams, cooked in flambed style with Singapore style chilli sauce and croutons added into them. The final product is like a chilli style soup with Venus clams and croutons. Once you tasted the sauce, you will secretly want more croutons to dip into the Ooh La La sauce and continue eating it!

The Quarters Fried Rice

An egg coated fried rice with two types of salted fish. The rice was so soft, fragrant and not oily at all. The Quarter’s Fried Rice was addictive because it was simply too good, too delicious. Once you tasted it, you will want more of this legendary fried rice by The Quarters.

Grilled Vegetable Platter

If anybody mentions that grilled vegetables doesn’t sound delicious or exciting, let them try the Grilled Vegetable Platter and they would change their views on this type of charcoal grilled vegetable cooking. Presenting Shitake mushrooms, vine tomato and asparagus with fermented black beans and garlic. For somebody like me who doesn’t really grill vegetables, the charcoal Grilled Vegetable Platter is a real delight and most welcome for me. Charcoal grilling the fermented black beans and garlic with asparagus is my favourite among them.

This new menu at The Quarters is ideal for multi-generations family dinner gathering, 6 amazing food items which are good to be shared among 4-5 people. Add on other delicious dishes on The Quarters menu and you woul have an remarkable and memorable ModSin food experience there with your extended family.

Last but not least – Desserts

There is always room for desserts, there are more delicious choices available in The Quarters food menu! Let me introduce two desserts that were presented during our Chargrilled food tasting event.

Durian Crème Brulee

This is Deming’s trademark dish, the original dish that got me to first know Deming for the first time (3 years ago) before he launched his food concept The Quarters. This is highly recommended, a Must Try if you love durian! Coming from a person who doesn’t eat durian (that’s me).

Wonderffle

2 different ice cream flavours, a scoop of pandan and lemongrass ice cream each, on top of the crusty and crispy waffle base. Pour the gula melaka over them, glazing it perfectly, beautifully and deliciously. This is probably my favourite dessert from The Quarters desserts menu list.

Extended and Expanded Quarters Experience

Personally, the Chargrilled Food @ The Quarters is an extension and expansion to The Quarters Experience that I had, it’s not just about how excellent and delicious the food at The Quarters. The diners can feel the heart, passion and soul of the fusion ModSin food, honest food cooked well, close to the heart, simple yet so wonderful, delicious and fulfilling, not just the taste buds, the tummy, the heart and soul.

First and foremost, having written my personal thoughts, feelings and views, it’s not just because I was invited to a food tasting at The Quarters, or I know the founder.

This is also not the type of food review per se that you might read in papers, magazines and websites.

This is how I give back, Pay-It-Forward and Pass-It-On, to the expanding ModSin local food fusion cuisines by The Quarters, also through my passion, heart, soul, taste buds and tummy, via my photographs, article coverage and sharing.

Chinatown Mid-Autumn Festival 2017

The time of the year, the Mid-Autumn Festival season in Singapore would start today on the 23rd September 2017, for a month long celebration to 19th October 2017. Many beautiful lanterns, over 1,000 beautiful, handcrafted lanterns will light up the streets of Chinatown each evening, a very beautiful, bright and colourful grand display of lights and colours, a popular annual event that attracts both the locals and overseas visitors as well.

The theme for Chinatown Mid-Autumn Festival (牛车水庆中秋) 2017 is “Celebrations of our Traditions 《传统新意庆中秋,同心共乐贺团圆》”, emphasizing on family togetherness along with the return of traditional cellophane lanterns, the inspiration for this year’s Street Light-Up.

Chinatown Mid-Autumn Festival 2017 is organised by the Kreta Ayer-Kim Seng Citizens’ Consultative Committee (KA-KS CCC) and supported by the Singapore Tourism Board. Mdm Halimah Yacob, President of the Republic of Singapore, is the Guest-of-Honour for the Official Light-Up and Opening Ceremony (开幕典礼与亮灯仪式) on Saturday 23rd September 2017. From my previous experiences watching the Chinatown Mid-Autumn Festival opening ceremony from the side lines, the opening ceremony performances have always been spectacular and lively!

Visiting Chinatown for Mid-Autumn Festival 2017, observe the lanterns! Do you remember the lanterns shaped like dragons, rabbits, roosters and rabbits made of cellophane paper hung over bamboo strips or wire frames? More than 1,000 lanterns along Eu Tong Sen Street, New Bridge Road and South Bridge Road. They are all handcrafted by expert craftsmen from China, designed in collaboration with students from Nanyang Academy of Fine Arts (NAFA), inspired by the traditional cellophane paper lanterns popular in Singapore during the 1960s to 1980s, a reminiscent of the colourful cellophane paper lanterns from the 60s to 80s era.

When you visit Chinatown in Singapore, you can’t miss the Mid-Autumn Festival lanterns on display, the lanterns are always well liked and received by both locals and overseas visitors. You can’t miss this big centrepiece lantern on display at Chinatown Mid Autumn Festival 2017! Measuring 12m tall by 10m wide, decorated with about 60 animal lanterns, located at the junction of Eu Tong Sen Street and Upper Cross Street. Keep a lookout for the large-scale lantern display sets of families representing Singapore’s multicultural community on the centre divider between Eu Tong Sen Street and South Bridge Road.

There are many activities and events taking place during Chinatown Mid-Autumn Festival 2017 till 19th October:

Family togetherness celebrated at inaugural Mid-Autumn Family Fest @ Chinatown

A new event this year is the Mid-Autumn Family Fest @ Chinatown (中秋 @ on 24 September 2017where families and friends can take part in a morning of traditional activities associated with the festival. Held at the Kreta Ayer Community Club, there will be various hands-on activities, such as mooncake-making, tea appreciation, calligraphy writing and lantern painting.

Activities and Events taking place during Chinatown Mid-Autumn Festival 2017

Starting from 20 September, local and overseas visitors can look forward to finding a wide array of festive must-haves and treats from mooncakes and tea to preserved fruits and decorative ornaments at the annual Festive Street Bazaar (中秋街市集).

For the arts-inclined, the Nightly Stage Shows (中秋综艺晚会) at Kreta Ayer Square will fill the evening air with song and dance performances by local and overseas troupes and entertainers that will amplify the celebratory mood during the festival.

The Chinatown Mid-Autumn Festival 2017 will draw to a close with the Mass Lantern Walk (中秋大型游灯会) on 1 October, where up to 5,000 people are expected to come together to mark the Mid-Autumn Festival under a moonlit night, topped with entertaining performances by local clan associations, overseas performing groups and dragon dance troupes.

The 10th Singapore Night Festival 2017 is here!

A milestone reached, the 10th year, this is the 10th edition of the Singapore Night Festival! Since making her debut in 2008, Singapore Night Festival 2017 is now into her 10th edition and it is starting tonight on the 18th August 2017, till 26th August 2017.

Following, documenting and photographing the 10the edition of Singapore Night Festival is also a milestone for me! I have been following, documenting and photographing Singapore Night Festival 2017 since her debut in 2008. Here is my collection of Singapore Night Festival photographs for you to go back in time to 2008 and observe what has changed over the past 10 years.

This is going to be my 10th year following, documenting and photographing Singapore Night Festival 2017 and a new photography album in my Flickr is now created to share my photos on this 10th magical year of Singapore Night Festival 2017!

The Night Lights will take place first on 18th August 2017, the performances will take place next week on 24th August to 26th August 2017.

Whiskey Appreciation Masterclass at The Whiskey House

Whisky or Whiskey? Depends on your geographic location and the English language that you are taught in, both word refer to the same alcoholic beverage around the world that we love and appreciate. My early whisky journeys evolve around Scotch whisky, bourbon whiskey before moving into Japanese whisky.

The world of whisky is pretty big out there, yet there is this duplex in the world today, that has a wide selection of whiskey from all over the world inside the duplex. Where can you find this wide whiskey selection? Inside Changi Airport Terminal 2, it is known as The Whiskey House! With a diverse range of 179 single malts, 68 blended Scotch whiskies, 30 American whiskies inside The Whiskey House, for the Whisky or Whiskey lover in you, this is a must visit place when you visit Singapore! As a whisky fan and avid traveler, I am wondering to myself, how did I manage to miss out this awesome whisky place inside Changi Airport during my previous trips?

On the upper level of the duplex, there is an amazing, must visit destination for all whisky lovers, an intuitive and experiential whiskey shopping experience whereby you can enjoy complimentary tastings of 100 different whiskies from around the world. This is where you taste and enjoy the whisky before choosing your favourite whiskey to bring home.

This was also the location whereby I attended their Whiskey Appreciation Masterclass, part of the Whiskey Festival, taking place from May 25 to July 1 at Changi Airport. For that weekend on June 16 and 17, the regional brand ambassador for The Balvenie whisky house played host for whiskey appreciation masterclass. That was where we met Neil Strachan from Scotland, who hosted us for the whisky appreciation masterclass. His sharing was very interesting and interactive, teaching us how to appreciate and learn more about whisky, the fragrance, aroma and taste. Having an expert to share about whisky tasting makes drinking whisky even more special and fun! If you are a Scotch whisky fan, do follow Neil on his Instagram account! Neil is an awesome ambassador, I hope to have future opportunities to learn more about Scotch whisky from him!

I am probably the “worst student” among the group of us at the Whiskey Appreciation Masterclass because I was busy tasting/drinking the Balvenie single malt vintage whiskies (I don’t wish to declare the number of whisky glasses that I had during the masterclass!) and taking photos of them for this article! While this is not specifically a whisky review article, I would just share some of my thoughts, all of them are pure vintage class and each has its own distinct fragrance, aroma and strength. What were the types of Balvenie whiskies that we tasted during the Whiskey Appreciation Masterclass? There were the 12 years, 16 years, 21 years and 25 years! Do you have a favourite from these four bottles of Balvenie whiskies? From these four bottles of Balvenie vintage whiskies, my preference is the 25 years vintage!

While drinking and enjoying Balvenie whisky, it brought back my recent travel memories to Nikka distillery in Yoichi, Hokkaido, during October 2016. I had a memorable and fun whisky tasting/distillery tour on my own! I would love to visit the whisky distilleries in Scotland in the future! Nothing beats visiting a whisky house/distillery, soaking in the atmosphere and surroundings! It’s like a pilgrimage for whisky lovers!

Whisky and Whiskey lovers in the world, I know you have a bias towards particular whisky houses around the world, you have your favourite whiskies. When you visit Singapore, don’t miss this golden opportunity to visit the Whiskey House inside Changi Airport Terminal 2!

I hope to share more about my whisky tasting experiences in the future, along with cuisines that would be suitable for each type of whisky. Whisky and cuisines pairing sounds like a great food and beverage adventure for me!
